That is one of the most famous Bible stories of all time. Involving Goliath's head being cut off; how, do you suppose. we show that with "no gore".

Sampson commits honorable suicide, killing hundreds. How will that be shown with "no gore".

If they want to make something fun for the kids, try an illustrated children's book that skips over the vicious bits.

A film or game adaption needs to be correct to the source material. This is a well understood rule of writing in video games and films.

Oh, and if a game comes out that displays the violence and graphic content in the Bible, heed the M (17+) and don't buy it for your kids until their 16 or 17.
